Increase character limit for variable and custom field values beyond 255 characters

Currently, variable and custom field values are limited to a maximum of 255 characters. When trying to store longer content (e.g. JSON, long texts, or complex parameters), the platform returns the error: [400] Cannot be contain more than 255 characters.
This causes the following issues:
- Workflows have to split data into many small variables, which is hard to manage and error‑prone.
- Longer payloads, configurations, or context data cannot be stored directly in respond.io.
Request:
- Significantly increase the maximum length for variable and custom field values orprovide dedicated fields without a strict length limit for technical data (e.g. JSON/text fields).
- Optionally, show a clear warning or documentation note about the current limitation so it is easier to understand why the error occurs.
This would simplify complex automations and reduce the need for external storage solutions.

Yihui Chan: I dont recall if we added this on our own or not, but if "Notes" is a custom field then yes.
Almost all CRMs that I've used have notes sections that are robust and have plenty of space to type as much as we want. Conversation summaries, important dates or other information that is not typically catalogued in a specific section.
